On this GORGEOUS Autumn day I was reminded of a time I was labeled as “Just such a Basic girl”. This was because I was observed loving my favorite Fall treat a good ole Pumpkin Spice Latte! Other things these Basic girls enjoy are Pumpkin Spice candles, North Face Fleece jackets, yoga pants, Ugg boots (which I have none). Other very nice and Basic Girl items, flannel sheets, Chicken noodle soup, cuddle duds, fleece blankets and many more. Just Basic that’s me! And I like that about me.
4 cooked diced boneless Chicken Breasts
1 large diced Onion
1 Tablespoon Olive Oil
5 diced Carrots
4 ribs diced Celery
3 quarts Chicken Stock
1 8 ounce bag Egg Noodles
1 Tablespoon Seasoned Salt
Add Black Pepper to taste.
In a sauce pan add olive oil, diced onion sauté until onions are translucent. Add cooked chicken, carrots, celery, chicken stock, seasoned salt and pepper. Simmer until carrots and celery are cooked. Add Egg noodles. Summer 8-10 minutes. Adjust salt and pepper.
Fall is a time when the leaves die and we bundle up and spend more time inside we draw inward. A quiet time to get ready for the severe weather and the holidays.
I love the benefits this Basic Girl gets from being a Granny, I found this nice Sour Dough Pretzel in my purse after Mass tonight! That baby had my heart!
